Sliced peaches, drizzles with a bit of lemon juice, bake together with a cookie-dough crust. Perfect for summer entertaining, this peach cobbler starts with some fresh fruits, a few ingredients from the pantry and you’ve reached your dessert destination. Don’t forget some vanilla ice-cream to serve the crowd. Think of it as a combination of a pie and some ice-cream, just the right amount of sweetness, simply irresistible.
Even my hubby, who is not a dessert fan, couldn’t resist the temptation and requested seconds.
A few pantry staples, a cup of blueberries, and a handful of slice peaches, this is all you needed for a luscious summer treat.
Blueberry Peach Cobbler
The Best blue berry peach cobbler dessert this summer - sweet, juicy peaches and blueberries with a crubmle cookie dough topping. Serve best with a dollop of vanilla ice-cream!
- 4 large peaches (about 2lbs, pitted & sliced)
- 1/2 cup butter (melted)
- 1/2 cup sugar
- 1 cup blueberries
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1 1/4 cup all purpose flour
- 1 egg
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 2 tablespoons turbinado sugar
- cooking spray
Preheat oven to 350 degrees.
Place blueberries and peaches in a large bowl. Drizzle with salt and lemon juice. Add sugar and toss well. Arrange fruit mixture evenly in a greased baking dish.
Grab another bowl: add in flour, baking powder, sugar. Add in melted butter, vanilla extract and eggs. Mix well to combine.
Use your fingers to spread the batter evenly over the fruit mixture. Sprinkle with turbinado sugar. Bake for 45 minutes, or until the top is golden and the filling is juicy and bubbly. Broil for an additional 2 minutes. Serve with vanilla ice cream. Enjoy!
