Have you ever noticed every time you order a fajita at a restaurant, the sizzling noise and burst of wonderful smell steaming off the waiter’s hand attract envious eyes from other tables? You probably ordered it for the same reason! The aromatic of taco spices: seasoned chicken, peppers and onions. Soon, you reach for another warm tortilla only to be greeted by the feeling of disappointment!
I’m talking about chicken fajitas, the one that you have at Mexican restaurant but can easily be transformed at home.
This recipe requires one baking pan, a few foil wraps and some chopping. I used chicken thighs in this recipe for more flavors but feel free to use chicken breast.
Slice up your avocados and some salsa while waiting for the foil wrap to do its magic.
This flavorful dish is your ticket to feed a hungry crowd. Plus cleanup is so easy, just toss the foil in the trash. It doesn’t get any easy than that.

Chicken Fajita Foil Packets
Chicken fajita foil packets filled with taco seasoning, red peppers, and onions. Cook in the grill or oven. Add your favorite topping and serve with tortillas, rice & beans. Easy and delicious!
- 1 lb boneless, skinless chicken thighs
- 1 teaspoon kosher salt (divided)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1 teaspoon olive oil
- 1 teaspoon taco seasoning (optional for more flavor)
- 1 medium onion (slided)
- 1 red pepper (sliced)
- chopped cilantros
- avocados, salsa
Wash and pat dry chicken thighs in a bowl. Sprinkle salt, garlic powder, onion powder, cumin, chili powder, olive oil and a little bit of taco seasoning. Let marinate for 15 minutes.
For the peppers and onions: Slice peppers and onions and toss them with 1/2 teaspoon salt.
Place chicken and vegetables together and wrap them in foil.
Cook on grill over medium heat for 20mins or bake in oven at 425oF until chicken is cook through.
Serve with flour tortillas, top with cilantros, salsas and avocado. Enjoy
