Beef Jerky Recipe (Kho Bo)
Spicy, Savory and full of flavors. This Vietnamese style beef jerky is savory, addictive and great for game day!
Serves: 1 lb
  • 2lb beef eye round roast (cut it along the grain)
  • ¼ cup lemongrass (minced)
  • 3 tablespoons minced garlic
  • ¼ cup brown sugar
  • 2 tablespoon beef broth powder (or 1 tablespoon salt)
  • 2 teaspoon 5 spices powder
  • ¼ cup less sodium soy sauce
  • 2 tablespoons cooking wine
  • 3 tablespoons vegetable oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon black pepper
  • 1 teaspn chili flakes (optional, if you like it spicy)
  1. After cutting the beef into slices, give the beef a good pound to flaten the slices using a meat tenderizer.
  2. In a large mixing bowl, combine all spices together. Use your hands and rub the seasonings on both side of the beef.
  3. Cover with plasstic wrap and refrigerate at least 4 hours, or better over night
  4. Preheat oven to 250 degrees
  5. Spread the beef on the cooling rack and place the rack on the tray. Don't forget to line the tray with aluminium foil for easier clean up
  6. Bake for 35 minutes until the beef gets dry. Cooking time will varies depend on the thickness of the beef. While baking, crack the oven door open to allow moisture to come in
  7. Flip the beef over and continue to bake on the other side, about 30 minutes until the slices are dry to your desire
  8. Remove and transfer to air sealed containers.
