Thai Green Mango Salad
a mouthwatering green mango salad with shrimps and a kick of fish sauce

  • 1 green mango (about 21 oz) - julienne
  • 10 large shrimps (boiled, slice in half)
  • ½ cup dried shrimps (soak in warm water and drained)
  • ⅓ cup fish sauce
  • 4 tablespoons sugar
  • ½ red onion (thinly sliced)
  • 5 cloves garlic (minced)
  • 2 Thai chilis
  • Small bunch of cilantro (chopped)
  1. Using the peeler, peel the mango into long thin strips.
  2. In a small bowl, whisk together sugar and fish sauce. Transfer the fish sauce to a small pan and cook on low heat. Continue to stir until the sauce forms a liquid mixture, approximately 3 minutes. Set aside and let cool completely
  3. Meanwhile, heat oil on a medium pan. Stir fry the dried shrimps until fragrant and crunchy. Set aside
  4. In a large bowl, combine mango, red onion, shrimps, dried shrimps, garlic and Thai chilis. Pour the fish sauce mixture over and mix well. Do a taste test and adjust according to your taste. Garnish with chopped cilantro.
  5. Note: you can add lime juice to the salad if the mango is not sour enough
