Grilled corn with endless toppings: butter, scallions’ onions Vietnamese style, parmesan cheese, etc. All the sweetness flavors of corn kernels, dipped in a spicy cilantro jalapeno sauce, with a few drizzles of scallion onions. Oh my yum!!
Grill on the cob spicy version is not hard to make but it packed a boat load of flavors: spicy, sweet, and seriously addicting.

Grilled Corn with Spicy Jalapeno Sauce
- 4 ears sweet corn (husks removed)
for the sauce:
- 1 medium jalapeno (chopped)
- 1 cup packed (cilantro)
- 2 garlic cloves
- 1/4 cup vinegar
- 1/4 cup olive oil
- 1/2 teaspoon salt ( more to taste)
for the scallion oil
- 1/2 cup chopped green onion
- 2 tablespoons vegetable oil
- pinch of salt
Heat the grill or preheat oven to 425 degrees F and arrange rack in the middle of the oven.
Roast the corn directly on the rack for 25 minutes, or until golden brown.
For the scallion oil: combine all ingredients in a small bowl and microwave for 20 seconds. Set aside
For spicy jalapeno sauce: Pulse all sauce ingredients in a food processor. Adjust taste accordingly.
Remove corn from oven. Drizzles some scallions oil on top, then serve with spicy jalapeno sauce. Enjoy!
