The secret on making these meatballs tender is the onion. Onion acts as a moist ingredient so the meatballs won’t dry out when baking in the oven. The panko crumb is also important in binding all the meat together.
Serve these meatballs with rice or steam vegetables and you’ve got yourself a delicious and satisfying lunch all week long.

Honey Sriracha Meatballs Meal Prep
Sweet, spicy meatballs require only a few ingredients and absolutely delicious. Perfect for meal prep or entertaining.
- 1 lb ground chicken
- 1/2 medium onion
- 1/3 cup panko crumbs
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 teaspoon black pepper
For the honey sriracha sauce
- 2 tablespoons honey
- 2 tablespoons sriracha
- 2 tablespoons less sodium soy sauce
- 1 tablespoon apple cyder vinegar
- 1 tablespoon water
- 1/2 tablespoon sesame oil
- 1 teaspoon vegetable oil
- 1/2 tablespoon corn starch
- green onions for garnish
- lime wedges for serving
Preheat oven to 375 degrees. Line a baking sheet with foil. Spray with nonstick cooking spray.
For the ground chicken: In a bowl, combine all marinate ingredients. Mix well to combine. Grease the palm of your hands with some cooking oil. Shape meat into 1.5 inch balls, place onto baking sheet.
Bake the meatballs for 20 to 25 minutes, until cooked through.
Sauce: place all sauce ingresdients exept corn starch and vegetable oil in a bowl. Stir to combine and season to taste.
Heat oil in a small saucepan over medium heat. Once hot, add all sauce mixture and bring to a boil, then turn the heat to low and let simmer for a minute,. Take about a tablespoon of sauce and mix with cornstarch, then add the mixture back to the saucepan. Simmer until sauce thickens about 1 minute. If it's too thick, add a bit more water, be careful not to burn the sauce.
Remove meatballs from the oven. Toss meatballs to coat with sauce.
Garnish with green onions and serve with lime wedges. Enjoy!
