For my friends that do not have an instant pot, this is the time. If you didn’t receive it for Christmas or miss the Black Friday sale. There’s still time to get an instant pot. Nothing fancy, just a pot who does magically things: like this chicken with roasted peppers under 20 minutes, or chicken broth for less than 15. Seriously, get on the instant pot train so we can be IP BFF’s.
I call it magic because how can these chicken be that delicious and yummy and tasty be done so quick. They’re herb loads, they’re full of flavors and wonderful textures.
This chicken with roasted red peppers is perfect for meal prep. They’re quick and incredibly easy to make. They’re also healthy and loaded of spices.
I love serving these chicken for lunch with steam vegetables and quinoa. And for extra deliciousness, top off with cilantro lime sauce.

Instant Pot Chicken with Fire Roasted Red Peppers
Tendered, juicy, herb loads chicken with fire roasted red peppers. And on the table for less than 20 minutes. Yummy and healthy all in one.
- 1 lb skinless, boneless chicken thigh
- 1/4 teaspoon cumin
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 4 tablespoons Trader Joe's 21 seasonings or Italian seasonings
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1 can (12oz) fire roasted red & yellow peppers
For the meal prep containers
- 2 cup quinoa
Place salt, pepper, garlic powder, cumin, 21 seasonings in the small bowl and mix to combine.
Use a knife to make cuts on to the chicken thighs and rub the marinate all over.
Place fire roasted red & yellow peppers in the pot. Add in the chicken. Drizzles olive oil on top. Sprinkles extra spices on top for more flavors. Turn the instant pot on high pressure and cook on for 8 minutes.
Use the quick release for the steam when done.
Divide chicken and quinoa evenly among meal prep containers. Serve with your favorite steam veggies and cilantro sauce (optional).
