There’s no fuss when it comes to the Instant Pot, with the help of this little IP lady, anything is possible. In this case: Cilantro Lime Rice.
This Cilantro Lime Rice is seriously delicious but so ridiculously simple to make. It is my favorite kind of instant pot recipes; you know the one that takes very little effort to pull together but still reward you with a delicious meal. It should be on top of that “quick and easy” recipe roster for sure. Don’t forget to add in your favorite burrito bowls fixings of veggies, steaks and home- made salsa, and Chipotle’s right at home.
This Cilantro Lime Rice is better and healthier than restaurant version. It’s incredibly flavorful rice forms the foundation and the toppings transform the dish into a wonderful meal. Make a double batch and you’re set for the rest of the week.
I used chicken stock as base and added 2 cloves garlic for more flavors. Use water if you don’t have any stock on hand. When the rice is done, you can discard the garlic, or mash it and combine with the rice.

Instant Pot Cilantro Lime Rice
Chipotle’s favorite rice can be made at home with only a few ingredients. Add in your favorite burritos fixings and dinner’s ready.
- 2 cups uncooked long grain rice
- 2 cups chicken broth (or water)
- 2 cloves garlic
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 cup chopped cilantro
- zest of one lime
Place rice, broth and garlic in the instant pot. Lock the lid and select rice setting. The IP will automatically sets at 12 minutes. When time's up, let it sit for another 3 minutes and use quick release to let all of the steam out.
Discard the garlic cloves or if you prefer you can mash it and combine with the rice.
Fluff rice with a fork, then add in oil, salt, lime zest and cilantro. Serve with your favorite Mexican toppings. Enjoy!
