Fried rice is no doubt the best way to transform old, left over rice into a delicious, satisfying meal.
Meet kim chi, the star of the show but don’t forget the other performers of the show: left over rice, frozen veggies and sunny side up eggs. This fried rice is so good and so much better than restaurant fried rice version.
I am a huge fan of one pot meals and easy dinners, if you haven’t noticed that already. When things go hectic and a little crazy at work like today, I want to come home with quick, simple, stress-free dinner. And this kim chi fried rice meets all of the requirements.
The variations of this kim chi fried rice make it more personal and adaptable, you can add eggs, chicken, or serve just plain old kim chi rice. It’s just that good!
I love using vegan kim chi from Trader Joe’s. Traditional kim chi has that oyster and fish flavor that I’m not a huge fan of.
You’ll love this recipe because it’s quick, easy and totally satisfying. Plus left overs are great for lunch.
KimChi Fried Rice
Easy, flavorful kimchi over left over rice. Dress it with protein of your choice. Perfect for a quick, simple meal.
- 2 tablespoons vegetable oil
- 2 cups 1 day old left over rice
- 1 cup frozen peas & carrots
- 1 cup kimchi (roughly chopped)
- 2 eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chicken powder (optional)
- 3 teaspoon minced garlic
- 1 tablespoon minced ginger
- 2 tablespoons soy sauce
For the rice: Sprinkle garlic powder, chicken powder, over rice until all incorporated. Set aside.
For the skillet: In a large skillet over medium high heat, add in minced garlic and ginger. Saute until fragrant. Add in rice, use a spatula to break up the rice and stir to combine. Add in peas, carrots, kimchi & soysauce. Let it stir fry for a few minutes until all ingredients are well absorbed.
For the eggs: Push rice to the side of the skillet and break the eggs. Scramble the eggs and mix them with the rice.
Serve rice with sunny side up eggs, chili paste, sliced cucumbers. Add any protein of your choice. Top with green onions and more kimchi. Enjoy!
