One Pan Salmon Teriyaki with Vegetables

Easy and healthy one pan salmon with tasty teriyaki sauce. This recipe is simple, effortless and ridiculously delicious. Perfect for meal prep!

For teriyaki sauce

  • 4 cloves garlic (minced)
  • 1/2 cup sugar
  • 1/2 cup less sodium soy sauce
  • 1/3 cup water
  • 2 tablespoons mirin
  • 1 tablespoon sesame oil
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon green onion (chopped)
  • 1 knob of ginger (peeled and grated)

Salmon and Veggies for the pan

  • 1.5 lb salmon filet (cut into 4 small pieces)
  • 1 medium sweet potato (cubed)
  • 1/2 head cauliflower (chopped)
  • 8 oz Brussels sprouts (sliced half)
  • 1 medium red pepper (sliced)
  • olive oil, salt & pepper for the pan


  1. For teriyaki sauce: Combine all sauce ingredients in a bowl. Whisk until dissolved. 

  2. Preheat oven to 425 degrees and line parchment paper on the pan .

  3. Place salmon filet on a plate and use 1/3 cup of teriyaki sauce to marinate. Set aside for 10 minutes. Pour the rest of remaining sauce in a small saucepan over medium low heat. Simmer for about 10 minutes until sauce thickens. 

  4. Place salmon in the center and vegetables on the pan. Season the vegetables with salt and pepper to taste. Drizzles olive oil over the vegetables, spreading it evenly. 

  5. Bake for 15- 20 minutes, tossing vegetables half way until salmon is flaky and vegetables are easily pierced with a fork. 

  6. Remove from the oven and drizzles some more of that yummy teriyaki sauce over the salmon and vegetables. 

  7. For meal prep: divide evenly between 4 meal prep containers. Keep some of the teriyaki sauce separately on its own containers. Enjoy!
