Prepare the udon: Boil the udon noodles according to package instruction. Rememer not to overcook the udon. Drain and rinse well under cold water.
Heat up butter in a large skillet over medium heat. Once hot, add in garlic and shallot until fragrant.
Toss in carrots and cook for a minute until soften. Add in udon noodles, dashi stock, soy sauce. Coat well and adjust according to taste.
Remove from heat and transfer to serving plate. Top off with scallions and rice seasoning.
