Happy Thursday guys! How was your week so far? I’m so glad the weekend is finally here. It’s one of those weeks where I felt this week had been dragging. I can’t wait for Saturday to get here so I can recuperate from a long, busy week. The hubby had been sick, and was working a lot this week so I didn’t get much help with babysitting Alexis. Packing breakfast or lunch for work is also out of the picture.
But I’m the breakfast kinda girl. I really need to fuel up my energy to start a long day.
And that’s when this magic super breakfast comes to play. I prepared this breakfast the night before so I can pack it for work the next day. I wasn’t sure if it is appropriate to share the recipe because it is sooo easy to make. Because you can whip this super breakfast up with your eyes closed. Really!!

A small ciabatini bread, some Egg White, slices of avocado, your favorite ham, pinch of salt and pepper
And there you have it…Breakfast of Champions!
- 1 teaspoon butter
- ½ cup eggs white
- 1 piece of ham
- 1 ciabattini rolls (slice half, toasted)
- ½ riped avocado, halved, seeded & sliced
- ½ teaspoon olive oil
- pinch of salt and pepper
- pinch of cayenne pepper
- Heat butter in a skillet and fry the eggs white. Set aside
- Toast your choice of bread and place the egg white on the bottom of the bread, follow by ham and avocado. Drizzle olive oil on top with pinch of cayenne pepper, salt and pepper
- Serve immediately
